Cauliflower soup

Cauliflower soup (from Zoe – NMAA Cooks – Australian Breastfeeding Association)

I usually double this recipe to feed the family and maybe have leftovers


60g butter

60g flour

3 cups steamed cauliflower

2 cups hot stock (chicken or veg)

1.25 cups milk or cream


Melt butter, add flour, cook a few minutes without browning. Blend in hot stock, stir until smooth, simmer 15 minutes. Puree the cauliflower and add to soup along with milk/cream and reheat but don't boil. Season as desired – I like to add a generous shake of nutmeg.

You can substitute other vegetables for the cauliflower to make any sort of creamy coup – e.g. carrots, spinach, pumpkin, tomato etc.
