What’s in the box/bag…….

I was inspired by Stephanie Alexander’s cooking bible, “Kitchen garden companion” for this weeks BROCCOLI recipe ideas:
  • Cooking Broccoli: Broccoli is frequently badly cooked. Separate florets with a knife, peel the chunky stems (once peeled are as tender as asparagus!), and cut into managaeble pieces. Cook them briefly and uncovered in a large saucepan in plenty of simmering salted water. Always make sure the serving dish is pre warmed as brocolli loses it’s heat fast.
  • A friend makes a cheese sauce with blue cheese, and spoons it over just cooked broccoli…YUM!
  • Brocolli plus pasta theme: Use tiny florets of cooked broccoli in a carbonara style dish, just add sauteed ham or bacon and a couple of well whisked eggs to the hot pasta, then finishing with grated parmesan….children love this dish!

Ingredients
Serves: 8
100g drinking chocolate
230g self-raising flour
200g caster sugar
100g dark chocolate, minimum 60% cocoa solids broken into pieces.
125g unsalted butter
250g cooked beetroot, grated
3 large eggs
Directions
Preparation:30min  ›  Cook:50min  ›  Ready in:1hour20min
1.Preheat oven to 180 degrees C. Butter and flour a 18cm round cake tin.
2.Sift flour and drinking chocolate together in a bowl, then stir in the sugar.
3.In a bowl suspended over a pot of hot water, melt the chocolate and butter.
4.Add the beetroot and the eggs and mix well.
5.Eventually add the beetroot mix to the dry ingredients and mix well.
6.Pour the mix into the prepared tin and bake for 50 mins until a skewer comes out clean. Leave to cool in tin for ten minutes.
7.Decorate by dusting with icing sugar or it is delicious served warm with custard.
